Leftovers Kheer

I love making kheer! I have a really easy recipe for this aromatic, cardamom rice pudding you can make in an Instant Pot, but this is a great option if you have a little bit of leftover rice. It takes half the time and still tastes absolutely delicious! And it’s always great to find a new way to use leftovers, especially when you’re cooking for just one person.
Ingredients:
1 cup cooked rice
2 cups milk
1/3 cup sugar
1/2 teaspoon cardamom powder
A dash of cinnamon
A few strands of saffron
Pistachios, crushed
Method:
Add the rice, milk, and sugar to a pot, and turn on the heat to medium. Add the cardamom powder and cinnamon and mix well.
Keep the heat on medium, while stirring, very slowly until the milk starts to simmer. (Make sure to keep the heat very low, so the milk never splits).
After about fifteen minutes of simmering and stirring, turn off the heat and let the kheer solidify a little in the pot.
Transfer to a bowl and add saffron and pistachios on top!
